Caramel-Apple Pork Chops – adapted from Caramel Apple Pork Chops on Allrecipes.com
4 thick pork chops
5 TBS butter, divided
1/4 C brown sugar
1/4 C apple juice
salt, pepper to taste
1/2 tsp cinnamon
1/2 tsp nutmeg
2 granny smith apples, peeled, cored and sliced
chopped pecans (optional)
1. In large skillet, saute pork chops in 1 TBS butter until browned nicely and cooked through. Set aside in warm oven.
2. Carefully deglaze pan with apple juice and simmer until reduced by half. Add 4 TBS butter, brown sugar, apples, cinnamon, and nutmeg. Simmer until apples soften and sauce has thickened. Add salt, pepper and pecans. Serve over warm pork chops.
