Spicy Shrimp Tortellini

Every so often, Brett and I find ourselves sitting on the couch on a Saturday night with no dinner plans (I almost never cook on Friday and Saturday nights.) Without any desire to put together a real meal, this quick and easy pasta has become my go-to solution.

This dish has 3 (THREE) ingredients, not including seasonings and olive oil. It takes a maximum of ten minutes, costs less than ten bucks, and easily feeds two adults for a night. Above all, this dish is so rich and flavorful – and filling!

Pop in a movie, grab a glass of wine, and enjoy!

Spicy Shrimp Tortellini no recipe source

1/2 lb fresh, raw shrimp
1 package frozen cheese tortellini (or 9-oz package in refrigerated section)
1/2 C Bertolli Four Cheese Rosa pasta
1 tsp cajun seasoning, and/or cayenne pepper
1 TBS olive oil

1. Run shrimp over cold water, removing tails. In large skillet, heat 1 TBS olive oil over med-high heat.

2. Add raw shrimp to pan. Add seasonings. Cook 2 minutes on each side, until shrimp is very plump (overcooking shrimp = tough, tiny shrimps.) Remove shrimp from heat and set aside.

3. Cook tortellini as directed. Depending on fresh versus frozen, this may take anywhere from 3-8 minutes.

4. Toss together tortellini, shrimp and pasta sauce. Serve immediately.
