Easy Homemade Protein Bars

Brett has been asking for homemade protein bars for as long as I can remember! We made an attempt a couple of years back but we were unfortunately left with a pan of mushy oatmeal that required a spoon. This time, I spent much more time googling recipes online and reading reviews to ensure that we didn’t waste his (expensive!) protein powder on another failed recipe.

Brett is much happier this go-’round. The protein bars didn’t require baking, but they set up nicely in the fridge and we were able to cut them into perfectly chewy, sturdy bars. Brett really likes the taste of these bars and has been having one before his morning workouts. The beauty of this recipe is its flexibility in that you could substitute any flavor of protein powder, and add any type of dried fruit or nut that you like.

Easy Homemade Protein Bars – adapted from various recipes online

3/4 C oatmeal
1.5 C protein powder (we used Cookies & Cream flavor)
1/4 C peanut butter
1/3 C fat free evaporated milk

Mix all ingredients together.  Note that these measurements are approximate – you want a very stiff dough, but you may need to use more milk or more oats to achieve this. Spray 8×8 pan with PAM, and spread dough into pan. Refrigerate 3 hours. Cut into bars and keep in fridge until needed.
