It had been a few weeks since last using our grill, and Brett and I were anxious to try something new. I found this pork chop recipe and knew we had a winner. The marinade has only a handful of ingredients and pork, being a relatively thin cut of meat, cooks up in just a matter of minutes.
I decided to spend the majority of my prep time on a half-dozen twice baked potatoes. If you haven’t tried these yet, consider this my command. The potatoes paired perfectly with the pork chops, and I couldn’t help but smile at the fact that we were enjoying two types of pork for dinner: the chops, of course, but also crumbled bacon in the potatoes. You didn’t hear me complainin’!
Grilled Brown Sugar Pork Chops – adapted from Allrecipes.com
1/2 C brown sugar
1/2 C low-sugar apple juice
2 TBS olive oil
1 TBS soy
1 TBS fresh ginger, minced
2 tsp cornstarch
1/2 C water
6 bone-in thick cut chops
salt and pepper
In small saucepan, heat sugar, juice, oil, soy and ginger until boiling. Whisk together water and cornstarch. Add to boiling marinade and cook several minutes. Turn heat off and let marinade thicken slightly.
Sprinkle pork chops with salt and pepper. Grill several minutes on each side. With a minute left, baste both sides of the pork chops with marinade. Serve remainder of marinade alongside chops.
